The 2020 Soul LX has P205 / 60 R16 tires on it and I have brand new winter tires from last winter that are P215 / 60 R16. Does anyone know if they will fit or might they rub being 10mm wider

If you can find one of those tire size comparison apps, you can check it out. However, since the same car may also come with 17 and 18 inch tires with no change to the wheel wells, I would assume that the wider tires would fit. The 17 inch tires on the EX are 215, and the 18 inch are 235. Doesn't seem to me that there would be that much different than your snow tires.

They will fit with no rubbing issues, however your speedometer will probably not read correctly. Google tire conversion charts and they will give you comparison readings.

Thanks that what I thought but didn't totally trust the dealer as they want to sell new tires. The speedometer is already off by 3kph at 100. It show me doing 100 while radar shows 97.

You should be fine:

The original 205 mm wide x 60% (transv. ratio) = 123 mm (per side) x 2 = 246 mm / 25.4 (conv. factor) = 9.7 in + 16 in (rim) = 25.7 in (total height)

New ones 215 mm wide x 60% (transv. ratio) = 129 mm (per side) x 2 = 258 mm / 25.4 (conv. factor) = 10.2 in + 16 in (rim) = 26.2 in (total height). Extra height 0.5 in.

As per the extra width: - I just mounted 245 / 50 R16 (same height / just a bit wider) and they fit fine (see pics below).

You put 245/50 on the factory 6.5" wide wheels and they don't pinch like crazy? Do you have shots going down the side of the car that show the sidewall bulge?
